You'll add

  • + 1 pack Rick's GF Scone Mix
  • + 300ml milk (or dairy-free milk)
  • + 40g butter, melted (or DF spread)
  • + A little extra milk, for brushing

Everything else is already in the pack.

Method

  1. Heat your oven to 220ยฐC (200ยฐC fan) and line a tray โ€” a properly hot oven is the secret to a good rise.
  2. Tip the mix into a large bowl. Add the melted butter and most of the milk and bring together into a soft, slightly sticky dough โ€” don't overwork it.
  3. Turn onto a lightly floured surface and gently pat to about 3cm thick. Cut rounds, pressing the cutter straight down.
  4. Sit the scones just touching on the tray, brush the tops with milk, and bake 12โ€“15 minutes until risen and golden.
  5. Cool slightly, split, and pile on the jam and cream. Best enjoyed warm the same day.

Rick's gluten free tips

  • โœ“ GF dough is softer and stickier than wheat โ€” that's normal. Don't add lots of extra flour or they'll dry out.
  • โœ“ Press the cutter straight down (no twisting) so they rise tall and even.
  • โœ“ Bake as soon as it's mixed, while the raising agents are active.
  • โœ“ Eat warm the day you bake, or freeze and warm from frozen โ€” GF stales faster.
  • โœ“ Fruit scones? Fold through half a cup of sultanas. Savoury? Add grated cheese and herbs.
  • โœ“ Brush the tops with milk for that classic golden, glossy finish.
