You'll add

  • + 1 pack Rick's Fluffy Pikelet Mix
  • + 1 egg
  • + 180ml milk (or dairy-free milk)
  • + Butter for the pan

Everything else is already in the pack.

Method

  1. Whisk the mix with the egg and milk until just smooth โ€” a few small lumps are fine.
  2. Rest the batter 5 minutes so the GF flours hydrate โ€” this is what makes them fluffy.
  3. Heat a pan over medium heat with a little butter.
  4. Drop in tablespoons of batter. When bubbles appear on top, flip and cook the other side until golden.
  5. Serve warm with jam and cream, or butter and lemon sugar.
