Rick Grant has been making gluten free food since 1984, long before it was a trend, after his wife was diagnosed coeliac.

Rick's scone method
Gluten free baking behaves a little differently to wheat. Follow Rick's method and tips for perfect results every time.
Light and fluffy gluten free scones
- 1 pack Rick's GF Scone Mix
- 85g cold butter, grated (or dairy free margarine)
- 1 egg
- 2/3 cup rice milk (or milk of choice)
- 2 teaspoons vinegar
- 1 beaten egg yolk for the tops (optional)
- Heat your oven to 220°C (200°C fan) and line a tray. A properly hot oven is the secret to a good rise.
- Tip the mix into a large bowl. Rub the cold grated butter through with your fingertips until it looks like fine crumbs.
- Whisk the egg, rice milk and vinegar together. Pour into the bowl and bring together into a soft, slightly sticky dough. Don't overwork it.
- Turn onto a lightly floured surface and gently pat to about 3cm thick. Cut rounds, pressing the cutter straight down.
- Sit the scones just touching on the tray. Brush the tops with the beaten egg yolk if using, then bake 12 to 15 minutes until risen and golden.
- Cool slightly, split, and pile on the jam and cream. Best enjoyed warm the same day.
- GF dough is softer and stickier than wheat. That's normal. Don't add lots of extra flour or they'll dry out.
- Press the cutter straight down, with no twisting, so they rise tall and even.
- Bake as soon as it's mixed, while the raising agents are active.
- The vinegar works with the raising agents for extra lift. You won't taste it.
